The cuvée Les Chorégies 2015 is made from a strict parcel selection of Grenache vieilles vignes which are over 60 years old and grown in rolled pebble and safer soils. The Grenache grapes are harvested at full ripeness and form the backbone of the blend. They are vinified in truncated wooden vats. A few Mourvèdre stocks co-planted with the Grenaches were added to the blend during vatting in order to tame the ardors of the primary varietal. The Syrahs are early to ripen and were harvested in early September and vinified in truncated wooden vats using traditional methods. They only make up a small proportion of the blend but bring exceptional energy to the wine.
Aged for 12 months in French oak tuns followed by 8 months in concrete vats before being left to rest in the bottle for a further 18 months.
This wine displays a deep cherry red hue with delicate ruby glimmers. The nose opens up with powerful notes of licorice, violet, leather and ripe fig complemented by soft yet intense aromas of spice. There is no lack of complexity although this wine is still somewhat restrained and waiting patiently for time to work its magic. The tannic structure balances out the wine’s strength and brings aromatic complexity and freshness to the tasting experience.
Food and wine pairing
The 2015 vintage pairs beautifully with a caramelized rabbit cooked in spices or autumnal dishes based on porcini mushrooms, truffle and game.
Between 15 and 16°C. This wine will flourish as soon as the bottle is opened and will continue to evolve slowly in the glass to reveal the finest of the Châteauneuf-du-Pape terroirs.
The 2015 vintage has been revealing a sun-drenched expression of the Grenache varietal since 2020 and will continue to evolve beautifully until at least 2025.
