Vinification
After a strict sorting in the vineyards, the fruit is partially de-stemmed and vatted. Gradual pumping overs and cap punching are carried out to ensure optimum extraction of the juices whilst long vatting periods impart a delicate tannic structure.
Ageing
Aged for 12 months in French oak tuns followed by 8 months in concrete vats before being left to rest in the bottle for a further 18 months
Tasting notes
This wine has now reached optimum maturity and reveals the ultimate expression of its terroir with notes of scrubland herbs, black olive, roasted fig and a medley of spices. The warmth of the rolled pebble soils has imparted a remarkably powerful palate balanced out by the safer soils which bring depth and elegance to the blend.
Food and wine pairing
The 2010 vintage will make the perfect partner for a roast haunch of wild boar in a cranberry sauce served with a duo of mashed potato and sweet potato. Also makes the ideal choice for a slow roast leg of lamb or lamb shank.
Service advice
Between 15 and 16°C. This wine will flourish as soon as the bottle is opened but should not be left open for too long as its aromas could fade quickly.
