Grenache Blanc, Roussane, Clairette, Bourboulenc
The harvests are carried out early and by hand in order to strengthen the expression of the terroir. Pressed directly as whole clusters in a closed cage pneumatic press with moderate settling of the musts for 12 to 36 hours at low temperatures (6-8°C). 80% of the cuvée is vinified in stainless steel vats. 20% of the blend is fermented in 300 L new oak barrels and stirred gently through until the end of December
Aged for around 6 months, up until springtime, on its fine lees in egg-shaped concrete vats (80%) and 300 L French oak barrels (20%).
Edouard Guérin had some very interesting observations to make regarding the 2011 vintage during a vertical tasting of the Clos de l'Oratoire des Papes white: ”As crazy as it sounds, the older this wine gets the younger it seems". This wine has retained its unrivaled freshness and notes of white stone fruits, petrol, licorice and mint. The limestone soils have imparted incredible tension to the palate as well as lingering saline notes on the finish.
Food and wine pairing
The Clos de l'Oratoire des Papes white 2011 makes the ideal choice for seared scallops in a citrus sauce, grilled lobster or hard cheeses.
The Clos de l’Oratoire des Papes white is best enjoyed at around 10°C in order to fully appreciate its aromatic complexity and natural freshness.
This cuvée is ready to be enjoyed for its floral, mineral and petrol notes but can also be kept for a further five years.
