Complete de-stemming, partial crushing depending on the grape, the plots and the level of maturity. Part of the Syrah and Cinsault is cold pre-fermented at 8°C for 4 days. The other grapes are put into vats and fermentation takes place between 22 and 24°C in order to achieve a slower fermentation, encouraging varietal and aromatic extraction over tannic extraction. Postfermentation maceration was carried out at between 26 and 28°C in 2014. Extraction is carried out by gentle pump-overs and release to ensure extraction of the finest tannins.
12 months in truncated French oak vats followed by 8 months in concrete tanks.
Tasting notes
This 2014 wine was displaying a decidedly Burgundian character in its first few years although the Châteauneuf-du-Pape terroir has since come to the forefront. It now reveals cocoa and undergrowth intertwined with notes of crushed blackberries. This wine’s silky tannins make it the perfect partner for delicately flavored dishes.
Food and wine pairing
This is a more daring pairing suggestion for the Clos de l'Oratoire des Papes red 2014 although one that always works beautifully: grilled langoustines with an olive sauce served on a bed of warm carrots. Otherwise pair with a veal rump in a morel mushroom sauce for an unforgettable gastronomic experience.
Service advice
Between 15 and 16°C. This wine will flourish as soon as the bottle is opened and will continue to evolve slowly in the glass to reveal the finest of the Châteauneuf-du-Pape terroirs.
Cellaring potential
This wine has truly come into its own since 2020.
